The Crown Inn at Dial Post in West Sussex is an historic coaching inn, which has been altered and enlarged at many different times over the centuries.  As new owners of the Crown Inn, we wished to create a traditional inn with an innovative restaurant and there was a need to provide a much bigger and fully modern kitchen, which was also capable of supporting outside catering.  Our issue was how to achieve the best synthesis of modern kitchen with the classic coaching inn heritage.

The initial brief for Baird Design was to take stock of the entire trading area of the inn with a view to proposing the best design option.  Paul’s knowledge of the required standards and other specifications for commercial premises was of huge benefit right from the start.  We then engaged Paul as Project Manager for the work and he successfully worked planning applications, the tendering process, financial control, contractor supervision and everything else through to completion on time and final snagging.

As so often with this type of project, several side issues arose and Paul’s brief increased to cover fence disputes, party wall agreements, liaison with neighbours and protracted, patient but successful negotiations with officials to obtain approval of the environmental noise reduction measures for the new kitchen systems.
